“I wanted to create a space where pressure becomes grace and the grounded begins to lift.

This dessert captures the pulse of cacao in transformation, a rhythmic movement from pod to chocolate, free and unaltered.”

A cacao–almond–orange tart on a Mayan Red 48% feuilletine crunch, topped with a Mayan Red 62% orange crémeux, an intense cacao sponge, and a chocolate whipped cream. On the side, a Mayan Red 62% sorbet infused with cacao nibs and orange, paired with a blush pear compote with roasted vanilla and jasmine tea.
